Brauerei Hermann - A Hidden Gem in Ampferbach
Some breweries make more noise than others. Others just keep doing their thing as quietly as possible - serving locals and anyone lucky enough to find them. Brauerei Hermann in Ampferbach is firmly in the latter camp. It’s the kind of place that seems content to fly under the radar, and maybe that’s part of its charm.
That said, it can be a little too quiet at times. On my last handful of visits, I arrived to find the main entrance firmly shut, despite posted opening hours. No sign. No explanation. Just an old wooden door and silence.
But persistence pays off. On a recent Thursday, I finally figured it out: if you walk around the corner to the right and head into the courtyard, you'll find life. That’s been the regular entrance on quieter days for some time now. It's not exactly signposted, but once you know, you know.
And what’s waiting inside is well worth the effort.
The Urstoff hell - served on draft at the Gasthaus
Brauerei Hermann’s Urstoff hell was a standout beer on this occasion. It proved everything I want in a Pale Lager - clean, crisp, and hop-forward, with a dry finish and a lingering bitterness that keeps you coming back for more. Floral and citric notes give it just the right lift. It’s the kind of beer that feels straightforward at first but keeps unfolding with each sip. Highly recommended. 4.7
When the weather warms up, the best move is to head up the hill to their Keller. It’s a relaxed spot with a great view, and it’s where they serve their second beer, a classic Kellerbier. Lagered the traditional way in the Keller, this one is darker than the Urstoff and less hop-driven, but smooth. Think biscuit, gentle floral notes, and high drinkability. It’s a beer that disappears quickly if you’re not careful. 4.2

There’s also reason to be optimistic about the brewery’s future. Georg Herrmann’s son - who’s mostly brewing at Schlenkerla these days - is already lending a hand back home in Ampferbach. That kind of continuity means a lot in a region where tradition and family ties run deep.
So if you’re passing through Upper Franconia and craving something authentic, don’t skip Brauerei Hermann. Just remember: skip the front door and head around the corner.
